Your Bowl, Your Rules: The Tomi Ramen Way
Some restaurants want to tell you what ramen is. We would rather ask you what ramen is to you.
That is the whole idea behind Tomi Ramen, our cozy neighborhood spot just off the Las Vegas Strip. Ramen is one of the most personal bowls of food there is. One person wants a rich, creamy, milky tonkotsu with thin noodles. The next wants a light shoyu broth with thick ones. Someone is chasing a super spicy challenge. Someone else wants a creamy vegan bowl with kale noodles and truffle oil, and that person is just as right as everyone else. So instead of deciding for you, we built a menu that hands the choices over to you.
Start with the bowl that is yours
If you like to build things your way, the Tomi DIY Ramen is where to start. You pick the broth: creamy tonkotsu, light shoyu, or miso. You pick the meat: chashu pork belly, beef, chicken breast, fried chicken, or tofu. You set your spice level from zero all the way to super spicy. You even pick the noodle, thin, thick, kale, or gluten free. Green onion and bean sprout come along for the ride.
It sounds simple. It is not. Getting every one of those pieces to work together, night after night, takes real discipline in the kitchen. That is the part we obsess over, so that the bowl you design at the table tastes the way you imagined it.
Or let us show you what we can do
If you would rather leave it to us, our signature ramens are where our kitchen gets to speak. The Naruto is our love letter to the classic: deep tonkotsu broth, egg, chashu, chicken breast, black garlic oil, bamboo shoot and seaweed. If you grew up on traditional ramen, this is the bowl that feels like home.
But we are in Las Vegas, one of the most mixed, hungry, curious cities on earth. So we also let other cuisines into the pot. Our Birria Ramen takes the sweet, sour, savory Mexican stew with pork and beef and lays it over noodles, with jalapeno, cilantro, corn and a squeeze of lemon. Our Bulgogi Ramen builds a shoyu broth around marinated sliced beef, the flavors of a Korean barbecue table in soup form. The Sea of Flame brings flamed seafood and fried soft shell crab into miso. The Curry Ramen, the Buta, the Inferno for the brave: each one started with the same question, what happens if ramen meets the food we actually love eating?
And for our plant-based regulars: the Absolute Creamy Vegan is not a compromise dish. Creamy vegetable broth, brussels sprout, crunch garlic, chili oil and truffle oil over kale noodles. It holds its own against anything on the menu.
The neighborhood hub
Here is the other thing about us: we keep late hours, because Las Vegas keeps late hours. We serve until 11pm most nights, and until 1am on Friday and Saturday. When you finish a shift at midnight, or the night has run long and you want one hot bowl before you go home, we are the door that is still open. Pair it with a cold Sapporo draft, a sake flight, or a lychee soju, and stay a while.
That is the word we keep coming back to: stay. Ramen, to us, was never fast food. It is a bowl that asks you to sit down, warm both hands, and take your time. Whether you are a local looking for your new regular spot or a visitor who wandered off the Strip, you are always home here.
Come build your bowl. We are at 2600 W Sahara Ave, #119, Las Vegas.
